| It has been a while since I've made this dish so when I landed a nice flatty this weekend he was promptly invited home for dinner.
Stuffing:
1½ cups soft bread cubes *
2 tablespoons minced red pepper
2 tablespoons minced green onion
2 tablespoons minced celery
1 teaspoon mince garlic
¼ cup melted butter
1 cup crabmeat **
* 8-10 slices of bread; trim away crust then cube no larger than ¼ inch.
** I use canned real crabmeat instead of the imitation meat found in the seafood department.
Mix all ingredients. Ready to stuff fillets.

Place stuffed fillets in a baking dish and sprinkle on a little thyme. Bake at 375 for about 18 minutes or until done.

I'm gettin closer to writing that cookbook.... 2010? maybe?
