| Cooked up some of the Mackerel filets yesterday.
First I gave em a bit of Worcestershire Sauce and Creole Seasoning.

Then into the smoker with em.

Meanwhile I got some ribs rubbed down and ready. Into the smoker with em to.

The fish came out when I felt it was just overcooked. I like it to be so for use in dips.

After 3 hours the Ribs got wrapped in foil. Added a good splash of seasoned vinegar.

2 hours later the ribs were unwrapped and brushed with a lil bbq sauce.
Back into the smoker.


When they felt right I took em out and sliced. Very tender and very good. I like the smoke Cherry provides.

| Does anyone know the best way to get drool out of a keyboard? Those ribs look mighty tasty.
