Its a really easy recipe and great tasting: PUMPKIN SOUP Onion – 1 tablespoon finely chopped Celery – 1 rib finely chopped Fresh Sage – 3 large leaves finely chopped Fresh Rosemary – 2 tablespoons finely chopped Maple Syrup – 2 tablespoons 15 oz can of Pumpkin Chicken Stock - to desired consistency Curry Powder – 2 teaspoons Poultry Seasoning – 1 teaspoon Cayenne Pepper – to taste · Sautee onion, celery, sage, rosemary in olive oil until soft. · Add spices and seasonings · Add pumpkin and maple syrup - stir until mixed through · Add chicken stock to desired consistency · Serve garnished with crountons and a dollup of sour cream **Add finely chopped apple (1/4 cup) to sautéed onion, celery, etc. for a sweeter taste and crunch in soup.
