i like the 16/20 size not to big not to small
season your flour
black pepper
cayanne
garlic powder
oregano
basil
salt (kosher)
little bit of sage
then standard breading procedure
flour, egg wash , breading
you can also use the flour instead of the breading if you want better color and extra crispy

I just cheat and use the Zatarain's mix. Lazy man's way to do it.
