I know what I love, it's more for a great snack, but man is it good. You take a bag of &lt;U&gt;sweetened &lt;/U&gt;shredded coconut, heat up a frying pan (medium heat), and add about a tablespoon or two of butter, then just as it is all melted, pour in about a cup of coconut and stir it around until all the coconut is covered in butter, increase heat a little at a time, (stirring constantly)until it gets toasty brown and the butter disapears. It will be done when it starts drying out and starts to get black on some of the pieces of coconut, get it out and place on a few paper towels, to help absorb any butter or coconut oil left over. Let cool for 2 or 3 minutes, then grab a handfull of the crunchy sweetness! Yum.&lt;/P&gt;&lt;P&gt;You could also roll your fish in it and then bake it, or fry it. We never have done this before so we tried it out. Got us some coconut in a bag, mango's in a jar and some beer batter from Publix. Also having never made Chutney we relied on good ole Emeril and the Food Network for a way to make it. &lt;/P&gt;&lt;P&gt;We were pleasantly surprised with the results and of course with the refining of some fresh ingredients like the Mango I am sure it would be even better next time. &lt;/P&gt;&lt;P&gt;Last Sunday it was Stone Crabs! What a great place we live in!
