Maybe topwaters like the new rapala x-rap walk works at night but the bite isnt consistent but youll get something big... Try a jointed size 13 x-rap for snook aand tarpon and you'll have some luck and also the doa shripm works well also, Try lunker sause for smell and that will atract fish but snappers the most... Just remember at some fish use sight but mostly vibration, sound, and smell if you use those senses you'll have some big dogs on.
