Good stuff! Although I was unable to find the recipe I used at the beach club. I did manage to find a couple recipes that seemed similar. I started by making a tasty pumpkin bread and also a good pumpkin custard. I let the bread sit out over night allowing it to dry out a little bit and then cubed it up. Poured in the custard and baked it in a bain-marie. After an hour the custard had set and the top had a lil crunch to it. I allowed it to cool and then sliced into blocks. I sauced the plate with a bitter carmel sauce and topped it with a quenelle of whip cream. I whipped the cream with vanilla, sugar, and a touch of nutmeg.

That sounds and looks phenominal!!  I love pumpkin anything . . . pumpkin muffins, pumpkin bread, pumpkin pie, pumpkin bread pudding (thanks to Vlap), and pumpkin soup.  Yup, I said pumpkin soup!  Its a really easy recipe and great tasting:

 

PUMPKIN SOUP 

Onion – 1 tablespoon finely chopped

Celery – 1 rib finely chopped

Fresh Sage – 3 large leaves finely chopped

Fresh Rosemary – 2 tablespoons finely chopped

Maple Syrup – 2 tablespoons

15 oz can of Pumpkin

Chicken Stock - to desired consistency

Curry Powder – 2 teaspoons

Poultry Seasoning – 1 teaspoon

Cayenne Pepper – to taste

Salt – to taste

 

·       Sautee onion, celery, sage, rosemary in olive oil until soft.   

·       Add spices and seasonings

·      Add pumpkin and maple syrup - stir until mixed through  

·        Add chicken stock to desired consistency

 

 ·        Serve garnished with crountons and a dollup of sour cream

 

**Add finely chopped apple (1/4 cup) to sautéed onion, celery, etc. for a sweeter taste and crunch in soup. 

 

Pumpkin is a great source of Beta Carotene and fiber . . . good tastin' and good for ya!!
