| PHO (pronounced "fuh") is a Vietnamese soup. Packed full of noodles and a tasty broth. Some cooked beef (brisket in the case of this soup) and a sliced rare beef (actually added to the VERy hot soup raw) along with tendon and tripe if you should so desire. I find it to be a little chewy and tough so I don't always get it. You also get a plate full of bean sprouts, sliced chilies, and basil leaves.
This is an incredible soup. The broth gets so rich and tasty with the basil and chilies added.

Also you need to add some siriacha (sp?) and the result is a spicy soup that will definately fill you up and make you sweat.

For those who live around the bradenton sarasota area the restaurant I went to today is called Nah Trang. Its on main street in sarasota. My bowl of soup cost $6.75. A very good ice tea was anotherbuck or 2. Its hard to eat at mcd's for that price and this was a much better meal.
If anyone is interested I do have a good recipe.

| | Dang it Jeff, I'm dying here... I can't get a good vietnamese meal around here, since I ate at a friends house in high school. I've come close a few times, but its just not the same... I need to find a good simple recipie for variations of lemongrass soup... and a place to get *fresh* lemongrass.

| Pho Bo (Hanoi Beef Noodle Soup)
6 cups beef broth
1 (1/4-inch thick) slice ginger
2 whole star anise*
1 cinnamon stick
1/2 pound piece boneless beef sirloin, trimmed of any fat
3 ounces dried flat rice noodles*
1/4 cup Asian fish sauce*
1/8 teaspoon freshly ground black pepper
1 cup fresh bean sprouts, rinsed and drained
1/8 cup minced scallions
1/4 cup fresh cilantro sprigs, washed and finely chopped
1 small thin fresh red or green Asian chilie, sliced very thin
1/2 cup fresh basil leaves
Lime wedges for garnish

In a 2 quart saucepan bring broth, ginger, star anise, and cinnamon to a boil. Reduce heat and simmer for 15 minutes.
With a very sharp knife cut sirloin across the grain into very thin slices.
In a large bowl soak noodles in hot water to cover 15 minutes, or until softened and pliable.
While noodles are soaking, bring a kettle of salted water to a boil for noodles. Drain noodles in a colander and cook in boiling water, stirring 45 seconds, or until tender. Drain noodles in a colander. Set aside.
Strain broth into saucepan and bring to a boil. Stir in fish sauce, salt and pepper. Add sirloin and sprouts and cook 30 to 45 seconds, or until sirloin changes color. Skim any froth from soup.
To serve, divide noodles into 4 bowls. Ladle soup over noodles. Sprinkle scallion greens, cilantro, chilies and basil over soup and serve with lime wedges

| I love lemon grass... Ive made ice creams infused with it, pot de creme's with it and shrimp skewered with it. Its a very versitile herb.Do you have any gourmet groceries near you? They tend to carry it and you can sometimes find it in some supermarkets. OR just grow it your self.
